Recipe of the fortnight: Vietnamese salad with poached chicken

Ingredients (serves 2)
300g chicken breasts (marinated in cumin, ginger, garlic and olive oil)
2tbsp extra virgin olive oil
10g fresh coriander, chopped
10g fresh mint, chopped
200g carrots, shredded
70g red onion, sliced
300g green cabbage, shredded
Two lime wedges
2tbsp unsalted roasted peanuts, chopped
20g fried shallots
Dressing (2.5tbsp fish sauce, 2tbsp fresh lime juice, 2tbsp white vinegar, 1tbsp water, 1 chopped chilli, 1 clove minced garlic, 2tbsp sugar)

Directions
•Place chicken in a large saucepan and add water until covered. Cook on medium heat. Once the water begins to simmer, turn the heat down to medium-low. Cook for 13-15 minutes until opaque throughout. Remove from saucepan and allow to cool for about five minutes.
•In a large bowl, combine cabbage, carrots, red onion, cilantro and mint. Drizzle with olive oil and dressing, and lightly toss.
•Pull the cooled chicken apart and shred into small pieces. Add to the tossed greens. Divide the salad between two plates and sprinkle with peanuts and fried shallots. Serve with lime wedges.
