Hong Kong’s best... White truffle specials

Umberto Bombana is ‘the king of white truffles’ and every dish on his decadent truffle menu, from scrambled eggs with mushroom jus ($590) to beef tenderloin with foie gras ($790), comes adorned with generous slivers of the pungent fungus. Opt for the homemade tagliolini coated in butter and Parmesan ($590) or try the earthy risotto with Piedmont cheeses and Jerusalem artichoke ($690). The restaurant is also hosting the 13th Worldwide White Truffle of Alba auction on Sunday 13 for invited guests with proceeds going to the Changing Young Lives Foundation. Gold
Chef Harlan Goldstein has unveiled seven recipes incorporating these coveted gems. Goldstein’s personal favourite is the white risotto with mascarpone and fava beans ($488). For a meatier affair, sink your teeth into the slow-cooked Dutch veal cheek with cauliflower foam, morels and garlicky white truffle ($588). Grissini
Grissini’s chef Andrea Fraire has put together a menu to showcase the Piedmont truffle ($150-$180/g). A unique highlight is the Raschera Piedmont cheese fondue with cardoon cake and yolk emulsion ($250), while the creamy risotto with parmigiano-reggiano, fresh mascarpone and veal juice ($230) should satisfy the more classic palate. Amber
Fungus fanatics should look no further than Amber’s five-course white truffle menu ($2,388). Dishes include puntalette – a rice-like pasta – with Alsatian bacon and white mushrooms in carbonara topped with white Alba truffles. Sabatini
Sabatini celebrates white truffle season with six new dishes garnished with the prized culinary white diamond. Highlights from the menu include handcrafted tagliolini decorated with chives, butter cream and freshly shaved white truffles ($568), and scrambled eggs and white Alba truffles served on brioche ($488). Whisk
This contemporary European restaurant places the brilliant white truffle on centre stage from now until Sunday 20. Go for the seasonal truffle tasting menu ($1,580), which features exquisite truffle-topped dishes such as scallop sashimi and chestnut gnocchi. 5/F, The Mira, 118 Nathan Rd, Tsim Sha Tsui, 2315 5999.
