Bunny feast for Easter

Rabbit is the other other white meat. Somewhat similar in texture and flavour to chicken when cooked (if a little gamier) rabbit meat has been farmed for mass consumption for centuries; indeed the Italians and French have been stewing, braising and roasting our fluffy friends since the dawn of cooking. So this Easter, we decided to track down some of the best rabbit dishes currently available in Hong Kong. We're sorry Mr Easter Bunny, can we still get our chocolate eggs? Writes Angie Wong

Bistecca
Best known for its fiorentina porterhouses, delmonico rib eyes, and T-bones, the house of steaks now also serves bunny. The butcher of Lan Kwai Fong cubes up hare for its fresh paparadelle with rabbit, porcini mushrooms and spring peas dish just in time for Easter. For those who rather not eat the bunny, there’s the other Easter sacrifical animal of choice on the menu – lamb. $158. 2/F, Grand Progress Bldg, 15 Lan Kwai Fong, 2525 6700.

Olive Greek & Middle Eastern
At this Middle Eastern tavern various rabbit dishes rotate on the menu. Last season rabbit and leek pie was the highlight, while this time around crispy rabbit leg and sausage hot pot, a stew of sweet potato, ginger, cinnamon, tamarind and baby onions is the prime choice. $162. 3/F, Elements, 1 Austin Rd West, Tsim Sha Tsui, 2810 8585; 32 Elgin St, Soho, 2521 1608.

Ivan The Kozak
Down the proverbial rabbit hole, and tucked away down a pokey alley in Soho lives Ivan the Kozak. This Ukrainian-Russian tsar has Кролик тушеный с вермишелью on the menu, which means baked rabbit in sour cream sauce with onion, carrot and spaghetti. $148. Spoon by Alain Ducasse
This isn’t just rabbit, this is rabbit from the house of Alain Ducasse. Here, the main rabbit dish is called “Rabbit from Poitou cooked in cocotte,” served with civet sauce, gnocchi and artichoke ($420). This version from west-central France (Poitou) is cooked in individual coq pots, and the sauce is flavoured with hare trimmings, not civet cats as suggested. $420. Gaia
The long-winded name of “Pappardelle all’ Ischitana con Coniglio alla Gaetano” or rather, “homemade pasta tossed in a Sangiovese wine marinated rabbit stew ragout in memory of my father Gaetano,” is as charming as this romantic Italian diner. You can literally taste the hours it took to make this rich ragu, and as such has become an all-time comfort favourite we’re happy to have all year round. $198. Super Star Seafood Restaurant
This is for the rabbit–huggers among you. White “rabbit” marshmallows are served at your dim sum meal. No animals (that we know of) were killed in the making of these sugary snacks. $20. 1/F, Amoy Garden Phase II, 77 Ngau Tau Kok Rd, Kowloon Bay, 2628 0383; and citywide.
