Bistro on The Bund

Café de Coral 
Yeah, it’s a fast food chain, but it serves plates of beef, seafood and fresh vegetables with your own individual soup pot made with two options of bases: kimchi beef or soy milk. Citywide. Starts at $43.

Fairwood
Fairwood presents a highly affordable Japanese hot pot with succulent pork and beef, fresh vegetables and lots of add-ons. Perfect for a quick midweek meal. Citywide. Starts at $50.

Youngest Hot Pot (Lau Sam)
A local eatery that specialises in making a duck base you won’t find anywhere else in Hong Kong. The soup is simmered for six hours with an old duck, pork bones and dozens of medicinal herbs, which draws in many curious expats and locals. 47B Shun Ning Rd, Sham Shui Po, 2360 2336, $150 per person.

Lan Yuan Pot
Maybe it's the DIY approach that Chief Executive Donald Tsang appreciates in a hot pot meal. We’re told he especially likes Lan Yuan Pot’s ‘bullwhip soup’, which uses a secret recipe for the base and was, until recently, only available to those in the know. Now it’s on the menu! Book one day in advance to secure a spot. G/F, 13-14 Yiu Tung St, Shek Kip Mei, 3586 9396. Set dinner for two to 12: $380-$2,190.

Senfuku
Hokkaido milk meets fish soup base at this steamy eatery. The tasty combination accentuates both the rich flavours of fish and the smooth texture of the milk. Throw in your ingredients for a heavenly experience. The sliced local beef is a must-order. 1/F, Empress Plaza, 17-19, Chatham Rd South, Tsim Sha Tsui, 2311 1812, $180 per person.

Shabu Shabu
With a largely Japanese clientele, this popular hot pot restaurant offers diners piles of high grade beef (A4 and A5). They have a variety of soup bases to choose from – from Sukiyaki to pork bone – and each order comes with plates of fresh vegetables. We love the private tatami rooms. Shanghai Dream
When you’re having real Shanghainese hot pot, you can skip the dipping sauce – the taste of the rich soup base is enough. This exquisite hot pot used to be served in only three exclusive private clubs in Hong Kong, but now it’s shown up on Shanghai Dream’s menu. Intrigued? Tai Hing Roast
Tai Hing offers thinly-cut beef, a nice assortment of vegetables, and a good spot to eat and hang with a large group of friends – because the social side of hot pot matters. Citywide. Starts at $68.
