When you work for a restaurant that has just won three Michelin stars, the only reason to walk away is to start your own place – which is exactly what a former chef of Lung King Heen has done. This innocuous shop has lines outside around the clock, full of diners wanting a little taste of his famous dim sum but for a fraction of the price. Dishes start around the $10 mark. Almost famous

Man Wah has put a lot of thought into their new dim sum menu, adding a Mandarin upgrade on traditional dishes. 5 Connaught Rd, Central, 2825 4025.

Fu Sing gives dim sum a twist by adding, unusually, Japanese-influenced items to the familiar classics. 1/F, 353 Lockhart Rd, Wan Chai, 2893 0881, and 1/F, 68 Yee Wo St, Causeway Bay, 2504 3228.
