Don’t let their smart exterior fool you into thinking they do foie gras burgers, or anything of the sort. At Republic, it’s all about the classic burger ($50) with the works: meaning mayo, lettuce and red onion.
What our tasters said: “Very tasty patty with great grill marks... Fresh and pink in the middle... flavoursome beef... I liked the crispy bits of burnt beef at the edges... Pleasantly soggy bun, from the meat juices... Quite thin though... The lettuce is soggy, but the red onion is crunchy... Bonus points for using red onions... This would’ve been a serious contender for the top spot it’d had less mayo and better lettuce and tomato.”

Overall: 7/10 Another lip-smackingly good patty denied the chance to compete at the top level because of its less than tip-top toppings. Still, we’ll be going back for more.
